Cut the meat and bacon into cubes, larger meat and smaller bacon. Season and put in a saucepan with a thicker bottom (tuci) in butter, and after a few minutes add the chopped onion and the cleaned and diced carrots.

Wash and chop the greens and add them over the meat. Season, add the garlic, bay leaves, a few peppercorns, paprika, brandy, wine and simmer on low heat with a lid for 2 and a half hours. If the juice drops too much, you can add a few tablespoons of boiling water.

Sprinkle 2 tablespoons of flour over the food and mix with a wooden spoon so that the sauce does not stick. Sit next to the food, stirring occasionally, for another 15-20 minutes and it's ready. Straighten the taste.
